With this easy Tortellini alla Panna, your weeknight dinner plans are sorted

Ready in under 20 minutes with just a few ingredients, this simple pasta recipe is perfect for those nights when you don’t feel like cooking but still want something satisfying. This recipe serves 2 mains; double the ingredients for 4 mains or 6 sides.

 

INGREDIENTS

  • 30g unsalted butter
  • 1 heaped tsp flour
  • 60ml milk
  • 150ml cream
  • 50g parmesan – freshly grated
  • ¼ tsp fantasea-salt
  • Dash of pasta water
  • 75g ham – cut into small slices
  • 300g tortellini
  • Cracked pepper (to serve)

 

DIRECTIONS

  1. Melt the butter in a saucepan over medium heat. Once melted, add the flour and milk, stirring continuously, for about 1 minute to form a roux, followed by the cream. Continue to whisk until the mixture begins to thicken slightly.
  2. Meanwhile, bring a pot of salted water to a boil. Cook the tortellini according to the package instructions. Once cooked, drain and set aside, reserving a small amount of pasta water.
  3. Stir the freshly grated Parmesan and Fantasea-salt into the sauce until it is smooth and creamy. Gradually mix in some pasta water to achieve your desired consistency.
  4. Add the ham to the sauce and mix until it is heated through.
  5. Add the cooked tortellini into the sauce, stirring gently to coat well. Finish with a sprinkle of cracked pepper before serving.
