Gyros at home

With name variations like doner kebab and yiros - which I know it as - one thing remains constant: it’s delicious however you prefer to pronounce it. This easy-to-follow recipe brings together savoury protein, crisp veggies, and a refreshing tang from Tzatziki Garlic Sauce. Marinade Ingredients

• 2 tbsp olive oil
• 1 tbsp SMASH Greek Lamb Rub (or similar herbs and spices like thyme)
• 1/2 tsp onion powder
• 1/2 tsp paprika
• 1 tsp of either lemon juice or red wine vinegar

 

Accompaning Components

• 6 flatbreads
• 400g protein (chicken and/or lamb doner kebab meat)
• Half an iceberg lettuce, shredded
• 250g (approx) Tzatziki Garlic Sauce
• 1 tomato, sliced
• Optional: onion and/or tabouli

 

Instructions

1. In a large bowl, mix together all the marinade ingredients.
2. Place the meat into the marinade, ensuring it is well coated. Let it marinate for at least 30 minutes, or refrigerate for a few hours for better flavour absorption.
3. Heat a grill or pan over medium-high heat and cook the marinated meat until browned and cooked through, then slice thinly. Alternatively, if you have a rotisserie, stack your meat and shave off once cooked.
4. Warm the Greek flatbreads or pita bread. I like to hold over an open fire (with tongs) to get that little crisp and fire flavour.
5. Assemble the gyros by placing the meat, tzatziki garlic sauce, lettuce, and tomato onto each bread.
6. Roll up the bread to form a wrap, securing the bottom half with foil.
