Tzatziki Garlic Sauce

Tzatziki Garlic Sauce, the perfect accompaniment to many Mediterranean dishes. I like to use this tangy sauce as a dip with some warm pita bread and a side for meats and vegetables. Pair it with our Greek Meatballs or Gyro recipe. See our pics and vids on Instagram.

 

Ingredients

  • 2 cups full fat Greek yogurt (about 250/300g)
  • 1 Lebanese cucumber, grated and strained
  • 1 tbsp SMASH Greek Lamb Rub
  • 1 tbsp extra virgin olive oil (Evoo)
  • 1-2 garlic cloves, minced
  • Juice from 1 lemon

 

Instructions

  1. Grate the cucumber to your preferred chunkiness. To maintain thickness and prevent the sauce from becoming watery, make sure to remove excess moisture from the cucumber for example, by draining or squeezing using cheesecloth or paper towel.
  2. Combine all ingredients and mix well into a thick consistency.
  3. Refrigerate until ready to use and for at least 30+ mins to allow the flavours to meld.
  4. Before serving, give it a final stir and garnish with a drizzle of olive oil and a sprinkle of fresh herbs

 

Notes and Tips

  • Halve the cucumber, scoop out and 'de-seed' the inside, then chop it after grating to prevent stringy pieces. Sprinkle the grated cucumber with salt and let it sit for approximately 15 minutes to draw out excess moisture.
  • While regular Greek yogurt is a common alternative to sheep or goat yogurt, ensure you opt for full-fat versions to uphold a thick consistency. Drain in a cheesecloth over night in the refrigerator for best results.
  • In place of the SMASH Greek Lamb Rub, use dried herbs like dill and thyme along with a touch of sea salt and black peppercorn. If you frequently prepare a lot of European meals, it’s well worth purchasing this seasoning, it’s flavour packed with so many uses! Tap here to get yours!
  • Mint is commonly used if you would like to add a little of this. And you can swap out the lemon juice for red wine vinegar.
