Risoni Salad

Risoni, also known as Orzo pasta, is an ideal accompaniment to any meal. Easy-to-make and providing a satisfying crunch and zesty taste sensation, it's designed to impress with its bright colours and fresh flavours, making it perfect for any occasion. Expect about 500g of cooked pasta from 200g of uncooked risoni to serve 6-8 side dishes. Pair it with our Juicy Mediterranean Chicken recipe, available here.

 

Ingredients

  • 200g risoni
  • 1 tbsp fresh parsley, chopped
  • 30g red onion, finely diced
  • 50g red capsicum, diced
  • 160g cucumber, diced
  • 1/4 tsp Fantasea-salt
  • 50ml extra virgin olive oil (evoo)
  • 2 tbsp lemon juice

 

Instructions

  1. Cook the risoni according to packet instructions.
  2. Once the pasta is al dente, drain it and rinse under cold water to stop the cooking process.
  3. Transfer the cooked risoni to a large mixing bowl and refrigerate for at least 30 minutes and until chilled.
  4. After chilling, add the remaining ingredients and mix thoroughly to ensure an even coating.
  5. Compliment your main by serving this salad alongside.
