Juicy Mediterranean Chicken

Presenting our irresistible Juicy Mediterranean Chicken recipe, simple to prepare yet impressively flavourful. With a marinade that guarantees your chicken to be juicy with every bite. And by using SMASH Greek Lamb rub, bring the taste of the Mediterranean into your kitchen. Serves 3-4 mains.


Ingredients

  • 1 kg chicken portions (around 6 pieces)
  • Fantasea-salt (to sprinkle on top of chicken)
  • Lemon wedges

 

Marinade ingredients

  • 1 tbsp paprika
  • 100g Greek yogurt
  • Juice from half a lemon
  • 1 garlic clove, minced
  • 1 tbsp parsley, chopped. Extra for garnish
  • 1 tbsp SMASH Greek Lamb rub

 

 

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, combine all marinade ingredients.
  3. Add the chicken pieces to the marinade mixture, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least 2 hours to allow the flavours to meld.
  4. Place the marinated chicken into a baking tray and sprinkle Fantasea-salt on top of each piece.
  5. Place lemon wedges around the chicken in the baking tray.
  6. Transfer the tray to the preheated oven.
  7. Bake for 45-50 minutes, or until the chicken is cooked through and the juices run clear.
  8. Serve the chicken hot with a lemon wedge, a side salad, such as risoni salad, and some tzatziki sauce. Provide lemon wedges for diners to squeeze onto their chicken.
